Homemade Meatballs and Alfredo Sauce

Tonight, I made some homemade Meatballs stuffed with Colby/Jack cheese. The Meatballs are made with ground beef, bread crumbs, Oregano, Milk, Ketchup, an Egg, and Colby/Jack Cheese, and salt and pepper. I wisked the seasonings, the egg, the Ketchup, and the milk together – then mixed in the ground beef. I formed 11 meatballs out of this mix, and rolled the ground beef mixture around the cheese cube.

Then I drizzled Olive Oil over the Meatballs and rub it over the Meatballs – then cooked in the Air Fryer at 390 degrees for 13 minutes.

Then I made some Rigatoni pasta and some homemade Alfredo Sauce. I started by putting some heavy whipping creme and some butter in a saucepan and simmering for 2 minutes. Then, I added some Garlic Powder, Italian Seasoning, and salt and pepper. I let that simmer for a minute, then added the shredded Parmesan Cheese and kept on the heat until the cheese was melted.

Once the cheese was melted, I poured the Alfredo Sauce into the Rigatoni, and stirred. Here is the finished products:

Then, I served the Rigatoni Alfredo and the Meatballs with some Whole Kernel Corn – an very good meal.
